Easter was yesterday, which means most of us have spent today trying not to eat the leftover candy and wondering what we’re going to do with the two dozen tye-dyed boiled eggs in our refrigerator.
We actually enjoy boiled eggs so much at our house that my mother whips up an extra batch just for my husband and I each year. But, if you aren’t like us and can solely subsist on boiled eggs for weeks at a time, we’ve come up with a few creative ways to indulge over the years.
6 Ways to Enjoy Boiled Eggs
1. The Classic
Nothing says afternoon snack better than a boiled egg with some sea salt and fresh cracked pepper. You can enjoy this before a workout, between breakfast and lunch, or at your 2 p.m. slump. It’ll keep you fuller longer than something out of the vending machine and it’s pretty tasty to boot.
2. The Mash
For a quick breakfast or an afternoon snack, smash three boiled eggs with one tablespoon of olive oil and a little salt and pepper to create a quick egg salad mash that you can eat on top of toast, a bagel or even a tortilla.
3. South of the Border
Nothing spices up a boiled egg like a couple of dollops of salsa. Feel free to sprinkle in some cheddar cheese for a southwestern boiled egg mix.
4. In a Pickle
Slice up your boiled egg into smaller pieces and do the same with a whole dill pickle. Use toothpicks to create yummy kabobs and enjoy the way the two flavors complement each other.
Threw a few cubes of cheddar cheese or smoked sausage into the mixture for the perfect party appetizer.
5. The European Job
If you’re looking for a well rounded breakfast meal, look no further. Peel two boiled eggs and combine them with a few slices of your favorite prosciutto and a few scoops of your favorite sauerkraut for a breakfast bowl packed with protein and fiber that will promote fullness and a healthy gut.
6. Medium Rare
Take steak and eggs to a whole new level by topping the two with a siracha sauce for an extra kick.
