Breakfast can be somewhat of a tricky meal for a lot of people. Luckily for me, I love eggs. However, I do admit that I occasionally get tired of eating them every. single. day. So, instead of casting my poultry pals to the side, I like to get creative with new, fun ways to cook them and incorporate ingredients.
Regardless of your opinion on eggs, you have to admit, they’re super versatile. You can do almost anything with eggs — mix them, match them, do whatever and you’re going to have a protein-loaded meal.
These Paleo breakfast burritos are a fun breakfast dish we enjoy at my house. Now, don’t get too hung up on the way they look — you can serve them burrito style or even salad style by combining all the ingredients in a bowl.
Either way, you’re going to have a great time!
Paleo Breakfast Burritos
Ingredients
- 6 eggs
- 1 cup of spinach
- 6 pieces of your favorite deli meat (we use turkey)
- 1 zucchini
- 1 squash
- 1 cup of your favorite salsa
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Directions
1. Spray a skillet with a nonstick spray and then crack six eggs in the skillet. Add salt and pepper to taste.
2. Slice up a zucchini and a squash and add them to your egg mixture, stirring often to create scrambled eggs. Stir until the eggs are cooked though and the vegetables are soft.
4. When the egg mixture is fully cooked, mix in your salsa for a delicious treat. Spoon the mixture into the turkey and wrap it up like a burrito, and viola! You’re done!
Tip: If you’re really dedicated to the idea of this looking like a burrito, make sure not to spoon too much of the mixture into the turkey wrap. However, if you’re more like me — GET IN MAH BELLY — then you can also mix it all together in a bowl. It may not look as nice but it will taste fantastic.
Another great thing about this recipe is that you can literally add any vegetables to this mix and it’ll be a winning combination. Leftover okra? Sure! Brussels sprouts? Why not! Get crazy. Throw some asparagus in there if your’e really feeling froggy.
