Slow Cooker Paleo Chicken Soup with Zoodles

Does the snow and cold weather got you feeling a little down? We’ve got the perfect remedy — a chicken soup that will warm you to your bones.

Now, I love me some chicken soup, but it just doesn’t have that homemade feel that fixes everything from snotty noses to broken hearts without the noodles — just my opinion. So in search of that elixir-type feel, I broke out my spiralizer and created this awesome recipe. Not only is chicken zoodle soup fun to say, but it’s delicious to eat and relatively easy to make. Think of it as a Paleo chicken soup for the frozen soul.

Ingredients

  • 1 package of chicken tenderloins
  • 4 stalks of celery
  • 2 cups of green beans
  • 2 zucchini
  • 4 carrots
  • 16 ounces of chicken broth
  • 1 can of full-fat coconut milk
  • 1/2 white onion
  • 1 tablespoon of garlic powder
  • 1 tablespoon of paprika
  • 1/2 tablespoon of salt
  • 1/2 tablespoon of pepper
  • 1 cup of water
  • 1/4 cup of arrowroot
Directions

  1. Combine all ingredients besides zucchini in a slow cooker on low heat.
  2. Using a spiralizer, create “noodles” out of your zucchini. You can add those directly to the pot or steam them and serve them separately if you prefer.
  3. Cook on low for four to six hours and serve. Yum!
Tip: Double this recipe and freeze half of it for a quick and portable freezer meal! Also, spaghetti squash also makes an awesome noodle substitute, especially if you prefer your noodles a little more al dente. You can clean out the squash and add the noodles directly to the CrockPot or roast the squash in the oven and serve the noodles separately.
