Name: Chicken Fajita Mix
Directions: 1. Cut up 1 pound of chicken breast or filets. 2. Heat them in a skillet with coconut oil, onions and garlic. 3. When the onions and garlic are cooked through, add red and green peppers. Cook for ten minutes, stirring occasionally. 4. While the peppers are cooking, combine the tomatoes, cilantro, lime juice and garlic in a food processor, pulsing until the mixture is liquid. 5. Add the liquid mixture to the skillet and cover with a lid. Reduce heat and cook for ten minutes. 6. Spoon the mixture into large lettuce leaves and roll them up to create wraps.
