Name: Chicken Scampi al Fresca

Directions: To Start - Smash, peel and finely chop garlic. - Season chicken breasts with sea salt and slice in long strips - Finely chop cilantro and tomato (season tomato with salt) 1) Heat a large skillet over medium/high heat and add the 2 tablespoons of ghee 2) Saute chicken on each side for about 5 minutes 3) Remove chicken from pan and roughly chop crosswise into bite sized pieces. 4) Return chicken to pan and thoroughly coat with drippings from pan 5) Remove from heat and add tomato and cilantro and fully incorporate The tomato and cilantro will add a freshness to the garlicky delicious chicken!! Who said chicken breast had to be plain and boring! Enjoy!
