Name: Italian Stuffed Mushroom Caps
Directions: 1. Wash your mushroom caps thoroughly and set them aside. 2. In a skillet, begin browning your ground beef. Once the beef is cooked, drain it using a colander and then return the meat to the skillet. Add a tablespoon of coconut oil, onion and garlic and cook until the vegetables are soft. 3. Add the diced tomatoes, tomato paste and chopped zucchini to the mixture. Simmer for 10-15 minutes. Preheat your oven to 350 degrees F. 4. When the 15 minutes is up, spoon the mixture into the mushroom caps. Top with parmesan cheese if your diet allows. Cook in the oven for 20 minutes or until the mushrooms are fully cooked. Serve.
