Name: Pistachio-Crusted Carrots

Directions: 1. Preheat your oven to 250 degrees F. 2. Combine shelled pistachios, parsley and mint into a food processor. Pulse until the nuts and herbs are blended together. 3. Add softened butter and lime zest to the food processor and pulse until the mixture forms a paste. 4. Peel and chop your carrots. 5. Lay the carrots on the baking sheet and spread the mixture around the pan. It will not spread easily -- this is fine. Leave clumps scattered around the pan. 6. Place the carrots in the oven for five minutes. After the five minutes, pull the carrots out and spread the now softened mixture throughout the carrots. 7. Place the carrots back in the oven for fifteen minutes before serving.
