Name: Sausage and Pepper Medley

Directions: 1. Heat up 1 tablespoon of coconut oil in a skillet over medium heat. Chop up half of a white onion and one clove of garlic. Add them to the skillet and cook for 4-5 minutes or until the mixture is fragrant and slightly browned. 2. Chop up three peppers and two turkey keilbasa sausages. Remember, if you're on Whole30, you need to check all of your sausage ingredients carefully or substitute with a different meat. Once your onions and garlic are ready, add the peppers and sausage to skillet and cook for ten minutes, stirring often. 3. In the same skillet, fry four eggs using the leftover coconut oil. 4. Divide the sausage mixture into containers (this will make 3-4 servings) and top each one with a fried egg. Add salt and pepper to taste.
