We’re entering Day 5 of our “Be a Better You” challenge here at FitnessHQ. The great news is that by making healthier eating choices, you’re not only becoming a better version of yourself, but also showing those around you the importance of eating right. It’s not about losing weight, it’s about living well! But the bad news is if you’re anything like me, the new shininess of the challenge has worn off and you’re starting to get a little…bored.
That combined with the fact that we’re going into the weekend means that some of you may be doubtng your ability to stick with this. Let me be the first one to tell you — don’t give up now! We’re going to knock out the weekend and the next three weeks together and you will not be sorry you did it. At the end of January, we’ll release you back into the world with a whole new arsenal of tools to live a healthier lifestyle.
In the meantime, let’s take it one day at a time. Since weekends are usually when I do my worst eating, I get a lot of cravings. Pizza is probably my all-time favorite weekend goody — what says Friday night more than having hot, greasy food delivered straight to your front door?
However since pizza is loaded with things like cheese, bread and gluten, it’s definitely not a great option while completing your challenge. Luckily for you, I’ve come up with the perfect Paleo pizza substitute. It’s easy to make and everyone will want seconds!
When you’re done, enjoy! This dish, like many Paleo dishes, is so versatile. You can increase your veggie load by throwing in whatever you have leftover in the fridge. You can use Italian sausage instead of ground beef for a different taste. Basically, you can do whatever you want to this dish and it’s going to taste amazing!
Not only is it a great, quick recipe to satiate your weekend cravings, but it’s also very kid-friendly — who doesn’t like Pizza? — and stores great as leftovers. Not that you’ll have any, but you know, just in case!
